HEALTHY OILS FISH STEW
Healthy Oils Fish Stew (cooking time: around 40 mins, serves 4 people)
1 bag frozen prawns
1 onion finely chopped
4 garlic gloves, minced
400g Classico organic chopped tomatoes
1 bay leaf
1 tsp smoked paprika
quarter teaspoon dried chilli seeds
250ml fish or vegetable stock
400g fresh white fish (if frozen, cook first)
120g Fish and Nature organic mussels in organic marinade
500g cooked potatoes, in bite-size chunks
fresh lemon juice and parsley to serve
Arcadia organic olive oil
Fry the onion in a large, deep saucepan (using a couple of spoonfuls of Arcadia olive oil) adding half the garlic until softened. Add the tinned tomatoes, with the bay leaf, paprika, chilli and stock, bring to a gentle boil. On a low heat, add the fish and prawns and heat gently for 5-8 minutes .Add the cooked potatoes and the rest of the garlic. A minute or two before serving, add the Fish & Nature mussels, together with their organic sauce and stir in gently.
Serve in bowls, with fresh parsley to garnish, if desired.
Season with black pepper and a squeeze of fresh lemon juice
Add a drizzle of Arcadia organic olive oil
A seafood mix can be added or used to replace the prawns.
The recipe works well with fresh or frozen king/tiger prawns. If using fresh king/tiger prawns, cook first, then remove from pan before onions are cooked, adding them back to the stew with the organic mussels.
