Shrimp Spelt Spaghetti (serves 4)

350g Castagno organic spelt spaghetti / whole grain spelt spaghetti

200 ml Arcadia organic olive oil

1 red pepper

1 large courgette

1 red onion

3 cloves garlic

50g Fish & Nature anchovies in organic olive oil

2 bags shrimps

400g Classico organic chopped tomatoes

1 tablespoon tomato puree

Put the olive oil into a large frying pan and add the diced courgette, fry until browned and fairly soft. Add the red pepper and fry for 2-3 mins. At this point put a large pan of water to boil and add the spelt spaghetti when a rolling boil occurs. Cook the spaghetti for 7-8 minutes. Next add the chopped onion to soften, followed by the crushed garlic and the anchovies. Put your prawns into the mixture and cook until they turn pink.

Add the tinned tomatoes. Leave to simmer for a couple of minutes, whilst you drain off the spaghetti and plate. Add the shrimp mixture to the dish and serve with chopped parsley.
